Introduction

If you use all natural 100% peanuts peanut butter this recipe can be sugar free. Also to make it interesting, I use half dark cocoa and half regular. If you use all natural 100% peanuts peanut butter this recipe can be sugar free. Also to make it interesting, I use half dark cocoa and half regular.

Ingredients

    1 C Xylitol
    1C Skim/NonFat Milk
    1/4 C Unsweetened Cocoa
    1 TBsp butter/margerine
    2 C Peanut Butter
    4 C oats
    Wax Paper/Nonstick foil

Directions

Set out a large sheet of non-stick foil or wax paper.
Combine Xylitol, Milk, Cocoa and butter in a 2 qt sauce pan. Heat until it boils. Boil for 1 min. then added peanut butter and oats. Remove from heat.
Spoon mixture onto sheet of wax paper or foil. Let set up until (relatively) solid.
I find these cookies are a little bit more gooey than traditional ones but are still just as good.
