Number of Servings: 8

Ingredients

    3 cups onions, chopped finely
    1/4 cup olive oil
    1/2 tsp cayenne pepper
    1 tsp paprika
    1/2 black pepper
    1/4 tsp ginger
    1 cup water
    3 lbs boneless, skinless chicken thigh cut into bite sized pieces
    2 cups water
    1/4 lemon juice
    8 hard boiled eggs

Directions

In a 4 to 6 quart Dutch oven or heavy stew pot, brown onion in a bit of the olive oil. Add rest of oil and spices - blend into onions. Add i cups of water.
Simmer on low while you do the next steps.
Soak chicken on 2 cups water and lemon juice for 10 minutes. after soaking, drain water from each piece of chicken. Add to onion mixture stirring it through. Cover and simmer over low heat until chicken is tender, 30-60 minutes. Add more water if necessary to bring to stew texture. Add hard boiled eggs a few minutes before serving. Serve on Injera, giving each guest an egg along with the stew. Serves 8.

    I love this!!! I added a few more spices, cardamom, cinnamon, nutmeg, and red pepper. My husband who doesn't do "exotic" foods loved it too. - 4/27/08
