Introduction

Number of Servings: 4

Ingredients

    1 Zucchini sliced
    1.5 tbsp salt

    1 whole sleeve of Whole Wheat Ritz crackers - crushed
    1 tbsp ground Cinnamon
    1 tbsp Pumpkin Pie spice

    Sugar Free Honey (1 Tbsp), 1.5 serving (remove)

Directions

Slice the zucchini and sprinkle salt on both sides of each slice. Let the slices sit while you make the bread crumbs.

In a food processor crush the crackers and add the cinnamon and apple pie spice. Place the crumbs in a shallow bowl.

Put 1 drop of honey one side of the zucchini slices (I'm guessing it's 1/8 tsp) and place this side down in the crumbs. While in crumbs, place a drop of honey on each of the zucchini slices and turn over breading this side of the slice.

Place on warm skillet for a few minutes on each side.
