Introduction

Made with whole wheat and soy milk. I converted this recipe from the standard Alber's recipe, because I am lactose intolerant and its a great way to incorporate whole wheat into your diet. Ingredients

    1 cup cornmeal
    1 cup whole wheat flour
    1/4 cup granulated sugar
    1 Tbsp baking powder (equal to 3 teaspoons)
    1 tsp salt
    1 cup plain light soy milk
    1/3 cup olive oil
    1 large egg

Directions

Combine dry ingredients in a large bowl, mix well. Combine wet ingredients in a bowl, mix well. Pour wet ingredients into bowl with dry ingredients, mix until well combined. Preheat oven to 400*. Grease a 9x9 pan. Pour batter into pan (it should be thick), and spread into corners. Bake at 400* for 20-25 minutes, or until golden on top.
