Introduction

I adapted a recipe from Bob's Red Mill Stone Ground White Rice Flour for White Rice Muffins. They are pretty good for my first attempt at a gluten free muffin. Ingredients

    1 Egg
    1/4 cup 2% Milk (you can use any liquid according to the recipe.)
    2 Tbsp. Sugar
    2 Tbsp Canola Oil
    1 cup White Rice Flour
    2 tsp Baking Powder
    1/2 tsp Salt
    1-2 Mashed Overripe Bananas

Directions

Preheat oven to 425 degrees. Lightly grease a 12 cup muffin tin. Mix all ingredients together in a mixing bowl. Bake for 15-17 minutes. Allow muffins to cool 5 minutes before removing from the tin.

    Omitted the egg entirely, and added more banana, vanilla, spice and dark broken up dark choc. so yummy - 6/4/14
