yes Geogirl! Add the vanilla indeed. Plus omit the butter and add non-fat youghurt instead. Lemon zest & juice [or use oranges.] Fresh ginger, cardamom & nutmeg too. I swap out the sugar and add dried apricots that have been rehydrated in boiling water. Could use dates instead.
A very adaptable recipe and a much needed welcome treat for some of us that can't eat ordinary muffins and sweets and not too high in calories either. Will make it again
