Introduction

Number of Servings: 8

Ingredients

    1 lb smoked turkey ring sausage, cut into ½ inch slices
    ½ cup chopped green onions
    28 oz canned tomatoes
    ¼ tsp pepper
    1 ½ cups water
    1 lb ground turkey
    1 lb boneless, skinless chicken breasts
    1 medium bell pepper, chopped
    5 cloves minced garlic
    ½ tsp salt
    1 cup uncooked rice

Directions

Boil chicken until done. When cooled, chop and set aside. Brown sausage, drain and set aside. Brown together the ground beef, bell pepper, green onions, and garlic. Cook until beef is browned. Add to the ground beef the tomatoes, salt, pepper, sausage, and chicken. Cover and simmer 20 minutes. Add in rice and water and cook an additional 25 minutes or until rice is tender.

Makes 8 1-cup servings.

(To cut down on prep time, you can use pre-chopped fresh ingredients.)
