Ingredients

    8 oz fresh asparagus
    1 cup milk
    1.5 cup fat free chicken broth
    1 tsp olive oil
    2 tbs onions or shallots, diced fine
    2 tbs flour
    desired seasonings (salt, pepper, tarragon, etc.)

Directions

this makes two 1.5 cup servings

Chop asparagus into 1 inch pieces.
bring broth to a boil, add asparagus, cover and simmer for 2-5 minutes.
drain, reserve liquid.
puree asparagus and milk in a blender.
heat olive oil, add onions if desired, lightly cook.
add flour and any desired spices, stir well.
add reserved liquid, bring to a boil and let thicken slightly.
add asparagus puree and heat through.
serve hot!
