Ingredients

    1 tbsp olive oil
    1 onion
    1 tbsp curry powder
    1 tbsp ground cumin
    1 tbsp ground coriander
    1 tbsp curry
    1 can lentils
    1 can tomatoes
    4 cloves garlic
    1 pkg frozen spinach

Directions

- saute onion in olive oil
- add spices
- add tomatoes and lentil, bring to a boil
- add spinach, reduce heat, cook on low for 15 minutes
Makes 6 cups
