Ingredients

    0.5 tsp pepper
    0.25 tsp crushed red pepper flakes
    1 Tbsp canola or corn oil
    1 cup diced onions
    2 garlic clove, minced
    0.5 cup bbq sauce
    0.25 cup ketchup
    0.25 cup water
    1 tsp vinegar
    1 lb pork tenderloin

Directions

1: Heat the oven to 350 degrees F. Sear the whole tenderloin on all sides in a hot, nonstick skillet. Remove from the heat and season with the pepper and red pepper flakes.
2: Cover the tenderloin with foil and bake for 25 minutes. Heat the oil in a medium saucepan and saute the onion and garlic for 5 minutes.
3: Add the barbecue sauce, catsup, water and vinegar. Simmer for 10 minutes. Shred the pork with 2 forks. Add the pulled pork to the sauce. Serve on buns (optional).

    Incredible!
    I made this for a group function and got lots of compliments. I'm also glad to see it if from the Diabetes association website and does not have excess oil or sugar. I actually used plain tomato sauce instead of catsup for even less sugar. Enjoy! - 11/14/10
