Introduction

A portion controlled dessert that is both light and refreshing.
This is very colorful I've made it using red or green maraschino cherries for different events and effects.

Number of Servings: 18

Ingredients

    (1) 8 oz brick of cream cheese softened (calculated with the 1/3 fat - can use the fat free for lower calories)

    1/2 cup sugar

    (1) 10 oz jar of maraschino cherries (reserve 9 nice whole cherries to decorate top of cups, cut in half) drain and coarsely chop the rest.

    (1) 8oz can crushed pineapple drained

    (1) 8 oz. can mandarin oranges (reserve 18 nice ones to decorate the top of the cups) drain and coarsely chop the rest.

    12 pecan halves

    (1) 8 oz tub of cool whip lite

Directions

In a bowl, beat the cream cheese and sugar until light and fluffy.

Add chopped cherries and pineapple (I blended with my mixer on high). Fold in the chopped oranges and Cool Whip.

Spoon into foil lined cupcake cups.

Garnish with cherry half, mandarin orange and pecan.

Freeze until firm.

Remove from freezer 10 minutes before serving.

Makes 18 average cupcake cup size fruit cups.
