Introduction

You can easily take the calories & fat down by substituting milk for the cream, or using less cream.
I usually need the cream to help me come close to my daily fat numbers.

Ingredients

    35 asparagus spears
    2 c carrots, grated (about 1 large carrot)
    1 10 oz pkg frozen chopped broccoli
    1.5 t garlic powder
    1/2 c onion chopped
    1 can chicken broth
    3 T cream

Directions

Remove heads of asparagus, set aside. Chop rest of asparagus. Add all ingredients except cream to a pot. Heat till boiling, then simmer 10-15 mins. Scoop all but about 1/2 cup of the soup into blender & blend. You may have to do it in 2 batches depending on your blender. Return to pot. Add asparagus tips and cream and heat for about 5 minutes, lightly simmering, don't let it get to a heavy boil.
Makes 4 hearty servings.
