Really nummy easy recipe for homemade milk pudding. Add different flavours for different types, or just add in a couple of TBSP of cocoa for a great chocolate pudding.

Really nummy easy recipe for homemade milk pudding. Add different flavours for different types, or just add in a couple of TBSP of cocoa for a great chocolate pudding.

Number of Servings: 4

Ingredients

    1/4 cup White flour
    1/4 cup splenda (the measures like sugar one or 5 packets of the other)
    1/4 tsp salt
    2 cups milk (I use 1% but skim works well too)

    1 egg, beaten

    2 tbsp low fat margarine
    2 tsp vanilla

Directions

Whisk flour and sweetener into milk (cocoa if you are using it).

Microwave:
Heat mixture on high for about 10 min checking and stirring every 2 min. Continue heating 2 min at a time till its thick and smooth. Whisk a small amount of the mixture into the beaten egg, then add this back to the whole mixture and continue heating in 1 min intervals for about 5 more minutes stirring well each time,. When done stir in the margarine and flavoring. Cover with plastic wrap (on the surface if you don't want a pudding crust) and allow to cool.

Stovetop:
Put mixture in heavy saucepan. Heat on medium low heat till thick and smooth, stir often this burns easily. Whisk small amount into Egg then add back into saucepan and continue heating and stirring till thick and smooth. Remove from heat, stir in margarine and flavor, cover with plastic wrap and cool.

    I tried this recipe and it is excellent! Very smooth, simple....I put the portions into very old stemware and then topped it with some of our homegrown blueberries. Elegant and delicious! I will make this again. - 11/13/13
