Ingredients
-
18 oz. boneless skinless chicken breasts
1/3 cup plain bread crumbs
1/3 cup Panko bread crumbs
1 tsp oregano
1 tsp sage
1/2 tsp garlic powder (NOT garlic salt)
1 dash black pepper
1/3 cup 1% Milk
1 large egg, beaten
Cooking Spray
Directions
1. Spray a baking sheet with cooking spray. Set aside
2. Preheat oven to 450 F
3. Wash chicken breasts and pat dry. Cut each breast lengthwise into 3 pieces or "fingers".
4. In a small flat bowl or dish, mix the beaten egg with the milk. Set aside.
5. In a secondary flat bowl or dish, mix the bread crumbs and the spices until everything is incorporated. Set aside.
6. Dredge each chicken piece in the egg mixture, followed by the bread crumb mixture. Place on the baking sheet evenly spaced apart.
7. Bake in the oven for 10 minutes, then remove and turn each piece over. Bake for an additional 8-10 minutes or until chicken is thoroughly cooked and golden brown. Times may vary according to your oven temperature. Serve with marinara sauce or another dipping sauce of your choice. Makes enough for 8-9 chicken fingers, or enough to serve 4 (my husband got the extra one).
