Ingredients

    1 cup old fashioned oats
    1 cup whole wheat flour
    1/2 cup all purpose flour
    1 tsp baking soda
    dash of salt
    1/2 cup chopped dried apples or apricots

    1 cup fresh strawberries - pureed
    1 TBS sugar
    1/2 tsp cinnamon

    1/2 cup granulated sugar
    2 egg whites
    1/4 cup 1% milk
    1/8 cup canola oil
    1 TBS apple juice

    1/4 cup slivered almonds
    1/4 cup mini chocolate chips

    Preheat Oven 350 degrees
    Use parchment lined cookie sheet or non stick.

    Mix pureed strawberries, 1 tbs sugar and cinnamon in a small bowl set aside.

    Mix oats, whole wheat flour, all purpose flour, baking soda, salt, almonds, and mini chips. Set aside.

    In a separate bowl, mix sugar, egg whites, milk, apple juice, and canola oil until combined.

    Add dry ingredients to wet ingredients. Chill batter for 15 minutes. Then use a medium scoop - about a TBS, to form cookies on baking sheet. Bake 12-15 minutes or until set.

    Makes approx 20 cookies
