Introduction

This is a simple low carb chicken parm that has no breading and no pasta, but it is still really delicious! This is a simple low carb chicken parm that has no breading and no pasta, but it is still really delicious!

Ingredients

    2 small (4 oz) boneless, skinless chicken breast
    1 can (15oz) of spaghetti sauce - seasoned
    1 medium spaghetti squash
    1/2 cup low fat mozzerella cheese
    1 Tbsp of olive oil
    Non-stick cooking spray
    Salt and Pepper

Directions

Preheat oven to 350 degrees

Spray pan with non-stick cooking spray

Cut spaghetti squash in half legnth-wise, scoop out seeds. Drizzle the inside with olive oil, sprinkle with salt and pepper.

Place cut side down on pan. Put in oven and bake for 60 minutes.

Spray a small baking dish with non-stick cooking spray. Add the two chicken breasts. When the squash is half-way done, put the chicken in the oven.

Bake chicken for 15 minutes. Take it out and pour spaghetti sauce equally over the two breasts. Sprinkle cheese equally on top of each piece. Place back in oven for another 15 minutes.

Take both out of the oven (after 60 minutes total for squash, and 30 minutes total for the chicken).

Scrape the inside of the squash out with a fork - CAREFUL it will be hot. The squash shreds into spaghetti-like strands. One half per person.

Plate the squash, and put the chicken covered in sauce and cheese on top. Enjoy
