This is a great substitute to eating out! I love making this dish and having a cozy movie night in...chopsticks are optional!

Ingredients

    1 package dry rice noodles (roughly 227g)
    1 cup raw bean sprouts
    1 tbsp chopped red pepper
    5 green onions, chopped
    1 tsp lemon juice
    1 tbsp soy sauce
    1 tsp rice wine vinegar
    1/4 tsp sugar
    1 clove minced garlic
    2 tbsp chopped peanuts
    1 egg
    nonfat cooking spray

Directions

1. Soak noodles in hot water for 15-20 minutes, or until soft. Drain and set aside.

2. Coat wok with nonfat cooking spray. Heat over medium-high heat.

3. Add red pepper and garlic; saute for 1 minute. Remove from wok and set aside.

4. Place egg in wok and scramble. Add garlic and pepper mixture back to wok. Add noodles, bean sprouts, soy sauce and vinegar. Heat through.

5. Add green onion, lemon juice, sugar and peanuts. Mix well and serve.
