Ingredients

8 cups chicken broth
1 t. red curry paste
6 garlic cloves, minced
1 T plus 1 t. grated ginger root
1 lemon - zested and juiced
1 lime - zested and juiced
4 T. Thai fish sauce
3 cups sliced shiitake mushrooms, sliced
2 boneless skinless chicken breasts, cut crosswise in 1/4 inch slices
2 cups light coconut milk
3 cups fresh baby spinach
2 T. chopped cilantro
Directions
Combine, broth, curry paste, garlic, ginger, lemon zest, lime zest, lemon and lime juice and fish sauce in a large saucepan. Bring to a simmer and add mushrooms, simmer for 3 minutes. Add chicken and coconut milk and simmer for 5 minutes or just until the chicken is done through. Stir in spinach and cilantro. Remove from heat and stir. Cover for 2 minutes, stir again and serve.
