This filling, balanced breakfast is a great way to start off your day. The cottage cheese adds an extra creaminess and more protein and the banana contributes natural sweeteness. Ingredients

    1/2 C. Rolled oats (or oat bran), uncooked
    1 C. Water
    1 Small banana, mashed
    1/2 C. Cottage cheese, 2%
    1 tsp. Honey
    1 tsp. Cinnamon, to taste



Directions

On the stove, heat oats and water. Add a dash of salt to taste, if desired. While oats are cooking, mash small banana and set aside. When oats start thickening (approx. 5 minutes. If using oat bran, less time is required), add mashed banana and stir in vigorously (I like to use a whisk). Keep stirring until oats are completely cooked to your preference. Remove from heat and add honey, cinnamon, and cottage cheese. Pour into a bowl and serve with extra cinnamon on top, if desired. I also like to serve with a splash of skim milk.

    Very Good
    I already make something really similar to this except I use 1/2 cup 1%milk to replace the water, no honey, I think the banana adds plenty of sweetener and a dash of nutmeg with the cinnamon. I don't always have cottage cheese but it adds a lot of protein when you have it. - 3/11/09
