Ingredients

    1/8 cup plus 2/3 cup whole wheat flour
    1 cup oat bran
    1/2 cup ground flax seed
    1-1/4 cups sugar
    7/8 cup cocoa powder (1/2+1/4+1/8 cup)
    1-1/2 tsp. baking soda
    1 tsp. salt
    3 eggs
    1-1/2 cups applesauce
    1-1/2 cups buttermilk
    1/ tsp. vanilla
    1/8 cup oil
    1/2 cup Hershey's special dark chocolate chips

Directions

Preheat oven to 325 degrees. Spray 24 muffin cups with non-stick spray. In a large bowl, combine the dry ingredients. In another bowl, whisk together the wet ingredients. Stir the wet into the dry just until combined. Add chocolate chips and stir just to mix. Do not overmix. Divide batter between the muffin cups. Bake for 20-25 minutes or until just done. Do not over-bake. Makes 24 muffins.

    Very Good
    My picky eater son rates it at 4.7 out of 5... he is eating 3 at once (and topping them with cool whip - good thing he doesn't have any weight issues). He says I HAVE to make them again.

    These were easy to make. I did use Splenda instead of sugar and put extra chocolate chips.
