Ingredients

1/2 c. oat bran
1 c. whole wheat flour
1/4 c. ground flaxseed
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
1 large egg, beaten
2 TB canola oil
1/3 c. unsweetened applesauce
1/4 c. sugar
1/4 c. chopped pecans
3 medium bananas, mashed
Directions
Makes 12 muffins
Preheat oven to 350 degrees. In a large bowl, whisk together bran, flour, flaxseed, baking soda, baking powder, cinnamon, and nutmeg. In a separate bowl, whisk together egg and oil until smooth. Stir in mashed bananas, applesauce, and sugar. Combine mixtures and fold in pecans. Spoon batter into paper-lined muffin cups or into greased muffin pan. Bake for 22 to 25 minutes or until tops spring back when lightly touched. Cool on a wire rack.
