Ingredients

    1 large onion, chopped
    1 can of chili beans
    1 can of black beans
    1 can yellow corn
    1 (8oz) can tomato sauce
    1 (8oz) can diced tomatoes with green chiles
    3 boneless skinless chicken breasts
    Shredded cheddar cheese, sour cream, & crushed tortilla chips for topping

Directions

Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

    very good, very tasty. However, the beer and taco seasoning mix aren't listed in the ingredients on top, and so I had to make do. Luckily my neighbor had a beer for me, then I added my own spices. Just wondering if those are included in the nutritional information. Great idea! - 3/26/07

    I served this to about 50 guests at my Christmas Eve open house, using my canned tomatoes and peppers, eliminating the tomato sauce, therefore the sodium level. It was a huge hit. I did put toppings of pepper sauce and cheese beside it so folks could add it as desired. - 1/8/08

    Incredible!
    I made this minus the beer (used chicken broth instead), frozen corn instead of canned and diced my own tomatos w/ diced jalapenos... It was wonderful...
