Ingredients

    1 lb of Chicken Breast
    1 can 384ml of Chickpeas
    1 large onion Chopped
    1 lemon, ends trimmed, sliced then quartered
    3 tbsp of flour
    1 tsp salt.
    1 tsp pepper
    2 cups, fat free low sodium chicken borth

Directions

Cube Chicken, Coat with Flour, salt and pepper. In a non Stick skillet. Sear on all sides, Add 1 chopped onion, 1 lemon, ends and seeds removed, sliced and quatered.

Cook over med -high heat for about 4 minutes, add canned Chick peas and broth, Simmer covered for 25 minutes, Add 6 chpooed olives and simmer 5 minutes more, Server over rice.
