Ingredients

    1-1/2 tablespoons Smart Balance Buttery Spread (or whatever butter you use)
    1/2 cup chopped onion
    1/8 cup chopped red bell pepper
    3/8 cup chopped carrot
    1/8 cup marinara sauce of your choice
    1 slice deli turkey
    1 cup uncooked whole wheat pasta of your choice (makes 1-1/2 cups cooked)

    salt, pepper, crushed red pepper and dill to taste

Directions

1. Melt 1 tablespoon Smart Balance Buttery Spread or butter in a skillet over low heat (keeping 1/2 tablespoon for later) and add chopped onions and chopped red bell pepper.

2. After a minute, add chopped carrot. and saute for about 5 minutes.

3. Add salt, pepper, crushed red pepper, dill, and 1/2 cup of water. Cover and let cook for 15 minutes.

4. After 15 minutes, add more water as needed to prevent the vegetables sticking to the pan. Also, boil water for the pasta in a pot.

5. When the water in the pot is boiling, add whole wheat pasta and let cook 10 minutes (or as instructed on the box). Meanwhile, add the marinara sauce to the skillet with the vegetables. When there are only a few minutes left for the pasta to be done, break up the slice of turkey into small pieces and add it to the sauce. Add more salt and pepper as desired.

6. When the pasta is done, drain it and add it to the sauce. Add 1/2 tablespoon Smart Balance Buttery Spread or butter. Keep the heat on and stir the pasta for a few minutes before serving.

The recipe makes 2 servings of 3/4 cup of pasta. .
