Introduction

This recipe uses buttermilk and a fraction of the butter normally used for scones to make it a healthier option. You can make it with raspberries as i have, but I'm sure any frozen berry would do! Ingredients

    2 cups flour
    3 tbsp sugar
    1 tbsp baking poweder
    1/2 tsp salt
    2 tbsp butter, chilled and cut in small pieces
    1 cup buttermilk, lowfat
    1 1/2 cup frozen berries, pick your fave

    (i usually double the recipe and freeze a bunch, so i use 2 cups white flour and 2 cups whole wheat flour...hence the 24 servings)

Directions

mix first 4 ingredients. add butter to make fine crumbs. stir in buttermilk. then add berries.

shape dough into 2 7" circles and cut into 6 wedges.

coat w/ butter flavoured cooking spray (i use becel)

bake till golden, about 20 minutes at 400 deg F.

these freeze very well and thaw for 10 seconds in the microwave for a great treat.
