Introduction

Every time we have had a get together my friend Laurie has made this time (I even request it.). So, I decided to finally recreate the recipe myself. She, of course, uses the fattening cream cheese and other high calorie ingredients, but maybe this version will tide me over. Makes about 16 servings of 4 T each. Ingredients

    -8 oz of light (1/3 less fat) cream cheese
    -1 can (15 oz) chili beans w/out meat (I used Dierberg's
    -1 c diced tomatoes (I happened to have Dierberg's low sodium)
    -1 c reduced fat mexican shredded cheese (I used Sargento 4 cheese mexican)

Directions

--Spread the cream cheese in the bottom of a microwave safe square dish (9 x 9). Mix the can of chili beans and diced tomatoes together and then pour over the top of the cream cheese. Top with the mexican cheese. Put in the microwave and melt the cheese. Serve with your favorite chips or veggies (not in the nutritional values).

--Makes 16 servings of about 4 T each.
