Ingredients

Chicken Breast, no skin, 400 grams
Garlic, 3 cloves
Olive Oil, 1 tbsp
Oregano, ground, 2 tbsp
S&W Organic Diced Tomatoes 2 14.5 oz cans
S&W Lower Sodium Black Beans 2 15 oz cans
Tomato Paste, 1 can (6 oz)
Chili powder, 3 tbsp
Potato, raw, 8 small (1-3/4" to 2-1/2" dia.)
Parsnips, 1 parsnip (9" long)
Directions
Makes 10-12 1 cup servings
Prep:
Peel and dice parsnip, garlic and potatoes
cut chicken into bite sized pieces
Cooking:
Put a large soup pot on medium heat and add olive oil and garlic
When the garlic begins to brown add the chicken
When the chicken is cooked through (about 10 min) add potatoes, parsnip and oregano
stir frequently
after 5 minutes add diced tomatoes and beans and chili powder stir for 5 min then stir in the tomato paste until everything is thickened
simmer for 30-60 min stirring at least every 5 min. (a secret to any tomato based item: the longer it cooks, the more rich the flavor mix becomes)
