Introduction

High fibre, low sugar muffins. I like them with blueberries added. High fibre, low sugar muffins. I like them with blueberries added.
Number of Servings: 24

Ingredients

    .5 cup margarine
    100 ml apple sauce
    3 cups bran
    4 cups buttermilk
    2 cups splenda
    4cups whole wheat flour
    2.5 tsp baking powder
    3 eggs
    1 tbsp baking soda dissolved in 1/8 cup boiling water

Directions

Preheat oven 400
Blend margarine and apple sauce
Add bran and mix
Add buttermilk and mix
Add splenda and mix
Mix flour and baking powder and add to ingredients and mix
Add eggs and mix
Dissolve baking soda in boiling water and stir into mixture.

Bake at 400 for about 20 minutes

Makes 24 large muffins
