Introduction

A really hearty and healthy soup that is so easy to prepare. I double it and freeze the extra for a time saver. Everyone in my family loves it and asks for it regularly. Ingredients

    2 lb Ground Turkey( I use the 93% lean)
    1 medium onion, minced
    12 oz can Rotel
    12 oz can stewed diced tomatoes
    1 can kidney beans
    1 can navy beans
    1 can pinto beans
    1 package ranch dressing mix
    1 package taco seasoning mix
    salt and pepper to taste

Directions

I use a food processor to make the onions tiny.
Separately, I also whir the Rotel and tomatoes in the food processor to make them a puree texture. My family won't eat big tomato or onion pieces.
In a large skillet sprayed with cooking spray lightly brown the onions then add turkey to fully cook . Lightly brown and drain.
Drain and rinse all of the beans. In a stock pot or crock pot place the remainder of ingredients, then add turkey/onion mixture. Stovetop cook on med until soup is fully heated throughout. Or I cook on low in crockpot.
Makes approx 10 , 1cup servings.
Optional: serve over Fritos or low calorie version.
Can be topped additionally with grated cheese, sour cream and guacamole. These items are not included in the calorie calculations.
