Introduction

Eggplant is perfect for the grill. Just a little olive oil, salt and pepper. Yummy!!! My favorite use of grilled eggplant is on a sandwhich. A grilled veggie sandwhich is about as good as it gets!! Makes approximately 4 - 4oz. servings

Preheat your grill to med-high heat.....about 375 degrees.

I made eggplant almost like this yesterday. It was SO delicious! Mine was just a bit different. I used baby eggplant and I am SO GLAD I did - I hate the seeds in big eggplant. I added minced garlic & put in a bag w/ eggplant, salt, and pepper with oil. Shook, grilled 3 or 4 min each side - Voila! - 6/16/09

Used Basil flavored oil, garlic and balsamic. Don't cut them too thick. Served them with WW pasta with Prego Sauce sprinkled with Parm. Cheese. Very good! - 8/25/11
