Ingredients

    3 Cups Flour
    1/2 tsp. Ground Nutmeg
    1 cup Skim Milk
    1 1/4 tsp. Salt
    2 Eggs, slightly beaten

    1 Tbsp Butter & 3/4 cup Bread crumbs, dry, grated, plain (optional - adds 420 calories)

Directions

Fill Large Pot with water and bring to rapid boil.

Meanwhile, combine flour, salt, and nutmeg in a mixing bowl. Stir in the eggs. Add the milk gradually while beating with a wooden spoon until the dough is smooth and elastic. (I use a kitchenaid mixer)

Cut small pieces of the doug into the boiling water, or use a spaetzle maker. Cook until dough pieces float (about 2-3 minutes).

While spaetzle cookes, melt butter in pan over medium heat. Add the bread crumbs and saute until slightly brown. (adds 420 calories)

Drain spaetzle into a colander. Rinse under hot water and drain again. Put the spaetzle in a bowl and toss with toasted bread crumbs. Serve immediately.
