I found this recipe in a running magazine a few years back. I changed a few ingredients and it makes really good low calorie banana bread! I love eating this for breakfast with my yogurt and granola! Number of Servings: 11

Ingredients

    1 2/3 cup Whole Wheat Flour
    1 tsp. Baking Soda
    ¼ tsp. cinnamon
    ½ tsp. salt
    1 cup plus 2 tbs. Splenda
    ½ cup Egg Beater
    ½ cup No Sugar Added Applesauce
    3 ½ Ripe Bananas
    2 tbs. low fat sour cream
    1 tsp. vanilla

Directions

1. Preheat over to 350 Degrees
2. Sift together flour, baking soda, cinnamon, and salt.
3. Beat sugar and egg beaters with whisk until light and fluffy.
4. Drizzle in applesauce
5. Add mashed bananas, sour cream, and vanilla.
6. Fold in flour mixture.
7. Spray bread pan with non-stick cooking spray
8. Bake 45 minutes

Makes usually 10-13 slices of bread.
