Introduction

You can substitute your favorite vegetable for the cauliflower for a real treat. You can substitute your favorite vegetable for the cauliflower for a real treat.

Ingredients

    1 tbsp, olive oil
    1 medium onion, sliced
    1 clove garlic, finely chopped
    3 cups cauliflower florette, boiled
    1 tsp curry powder
    1 bunch fresh spinach, (you can use 1 cup frozen)

Directions

Boil cauliflower until soft.
Clean spinach and remove stems then run under hot water until wilted. Squeeze out excess and finely chop.
Add olive oil to a hot skillet and then add onion and cook until soft. Add garlic and cook for a minute more.
Add cauliflower and stir, breaking florettes into small pieces.
Add curry powder, stir then add spinach and stir again.
Season to taste.

    Incredible!
    This was delicious! I didn't have curry so I looked up on the internet of what was in curry and attempted to make my own. :) The last part of the directions said season to taste and that's what I did. It was DELICIOUS!! Thanks for sharing it! - 1/31/08
