Introduction

I adapted this recipe from "Sloppy Joe Stew", found in "The Everything One-Pot Cookbook". The original recipe was made with ground beef, more potato, and salt, but no basil or garlic. I wanted to add some taste and make a lighter version, more consistent with my new healthy lifestyle. The original was intended for stovetop cooking, but I made it in my crockpot. Bon Apetit! Ingredients

    2 Tablespoons Olive Oil
    2 Pounds Ground Chicken
    1 Cup Chopped Onions
    Ground Pepper, to taste
    1 Teaspoon Garlic, Chopped
    1/2 Teaspoon Basil
    28 ounces Diced Tomatoes
    2 Large Potatoes, Peeled and Sliced
    2 Cups Carrots, Sliced
    1 Cup Celery, Chopped

Directions

Serves: 7

Heat the oil, onions, garlic, & basil in the crockpot to a sizzle. Add ground chicken; stir occasionally. Once the chicken is crumbling and starting to brown, add the remaining ingredients. Cook on low heat for 4 - 6 hours, stirring occasionally, until the potatoes are tender.
