Ingredients

3 Tbsp low-sodium soy sauce (or tamari, a wheat free soy sauce)
3 Tbsp honey or agave nectar
2 Tbsp canola oil
1.5 lbs boneless, skinless chicken breasts, cut into pieces
Pepper
2 cloves garlic, finely chopped
1 Tsp grated ginger
3-4 scallions, sliced
5 oz. can water chestnuts, drained, chopped
1/4 Cup roasted unsalted cashews
Boston, Bibb, or Butter lettuce, leaves seperated
Directions
Combine soy sauce and honey or agave in small bowl, set aside.
Heat oil in large skillet over medium-high heat.
Add chicken, sprinkle with pepper. Cook, stirring occasionally until almost cooked through.
Lower heat to med. and stir in the garlic and ginger. Add scallions and cook for 1 min. Stir in water chestnuts and half the soy sauce mixture. Continue to cook until chicken is cooked through. Remove from heat, sprinkle with cashews.
Divide lettuce leaves amond plates and spoon chicken over top. Serve with remaining soy sauce mixture for drizzling.
