Ingredients

1 cup brown rice
1 tbsp low-sodium chicken boullion, ground
1 cup yellow onion, chopped
1 cup bean sprouts
1/4 cup green onion, chopped
1 tbsp ground ginger
2 tbsp teriyaki sauce
2 + 1 tbsp low sodium soy sauce
Olive oil cooking spray
Directions
1. Bring 2 1/2 cups of water to boil over medium-high heat. Add 1 tbsp chicken boullion to water and stir until dissolved. Add rice and stir. Cover with pot top and simmer over medium-low heat for 40 minutes, or until water is absorbed by rice. Remove rice from heat and drain. Allow to sit for 10 minutes.
2. Spray a stirfry pan or wok with 1-2 quick sprays of olive oil cooking spray and heat. Add yellow onion, green onion, and bean sprouts and cook for 1-2 minutes. Add 1 tbsp soy sauce and mix well. Allow to cook for 1-2 more minutes.
3. Add rice to stirfry pan. In center of rice mound, add 2 tbsp soy sauce, teriyaki sauce, and ground ginger. Mix well. Cook for 3-4 minutes, or until thoroughly mixed and rice has absorbed the sauces. Remove from heat and serve immediately.
Makes 2-3 1-cup servings. Great side dish for teriyaki chicken breast or grilled teriyaki skirt steak.
