Ingredients

    4- 4oz chicken breasts, cut in half
    1/4 tsp salt
    1/4 tsp pepper
    2 tsp olive oil
    1 small onion sliced
    1 cup sliced mushrooms
    4 oz artichoke hearts
    1 Tbs tarragon
    1 cup chicken broth
    1 1/2 cups white wine
    2 Tbs cornstarch

Directions

Season chicken with salt and pepper
Heat oil in skillet and brown seasoned breasts on both sides over medium heat
Add onion and cook 3 minutes
Add mushrooms, cover and cook 15 minutes
Remove chicken and vegetables to a platter
Add artichoke hearts, tarragon, chicken broth, and 1 cup of wine to the same skillet and bring to a boil
Allow to simmer 15 minutes
Stir cornstarch and remaining wine in a small bowl
Slowly stir cornstarch mixture into broth mixture and continue to simmer until sauce thickens
Pour sauce over chicken and vegetable and serve

    tastes yummy, so healthy and low cal. Next time I'll try adding some garlic and lemon juice; I like lots of flavor in my food. :-) - 3/22/09
