Introduction

Ingredients

    2 tilapia loin fillets
    1 cup Trader Joe's organic wheat and flaxseed crackers
    1 egg white
    2 tbsp nonfat milk
    1 tsp lemon juice

Directions

Preheat oven to 425 degrees.

Grind crackers into fine crumbs with a blender and add seasoning of choice. Stir crumb and seasoning mixture and spread out on a flat plate.

Beat egg white with milk in a shallow bowl. Drag fillets through egg white/milk mixture, then place in cracker crumbs, turning to coat.

Place in a glass pan lined with tin foil and bake at 425 degrees for 15 minutes, until coating is crisp and fish flakes easily with a fork. Drizzle each fillet with a little lemon juice before serving.
