Ingredients

    2/3 Cup + 2 Tbls All-purpose white flour
    1/3 C. Ginger snap cookie crumbs
    2 Tbl + 1 C granulated Sugar
    3 Tbl unsalted butter
    2 large eggs
    2 egg whites
    1 Tbl grated lemon zest
    1/2 C fresh Lemon Juice (about 4 small lemons)
    Confectioners' sugar (opt.)

Directions

1.Prehead oven to 350 F.Line an 8" square pan with heavy-duty foil, extending it 2" beyond the sides so bars can be easily lifted out of pan. Spray the bottom and sides of foil with non-stick spray.
2. Crust: combine the 2/3 C of flour, Ginger snap crumbs, 2 Tbl granulated sugar and the butter in a med. bowl, stirring until the misture is the consistency of wet sand. Press the mixture into the bottom of the pan to form an even crust and bake until firm, about 12 min.
3. Meanwhile, whisk together the 1 C. granulated sugar and the 2 Tbl. flour in a med. bowl. Whisk in the eggs, egg whites, lemon zest, and lemon juice until well blended, about 1 min. Pour over the hot crust, return the pan to oven and bake until golden and set in center, about 30 min. Cool completely in the pan on a rack. Lift out the whole square, holding on to the foil ends, and place on a cutting board. Remove the foil and cut into 16 squares. Sift confectioners' sugar on top.(opt).
