Ingredients

    • 15-oz. can of great northern beans, drained and rinsed
    • 1/2 cup salsa
    • 1 cup frozen corn
    • 1 teaspoon chili powder
    • 1 dash hot sauce (more or less to taste)
    • 6 whole wheat tortillas
    • 1/2 cup low fat cheddar cheese, shredded
    • 1 cup nonfat sour cream

Directions

1. Drain beans and place in a medium sized saucepan. Mash slightly with a fork leaving some of the beans whole.

2. Add corn, salsa, chili powder, and hot sauce. Mix well. Heat on medium until bean mixture is hot.

3. Wrap tortillas in microwave safe plastic wrap and microwave on high for 40 seconds.

4. Spoon bean mixture down center of each tortilla. Sprinkle with cheese. Top with sour cream. Roll up tortilla and serve.



Makes 6 servings.

    Easy and quick preparation. I made the burritos, wrapped them in plastic wrap and put them in the freezer for the "grab & run" meals when I'm running late for work. - 5/24/08

    for those worried about putting plastic in the microwave, I put the tortilla between two damp paper towels. I only put in for 30 seconds - but microwave times vary. - 6/18/08

    The best, I heat the tortillas up on the stove and use chipotle powder for a different flavor, but tried it this way first and loved it. - 6/18/08

    too high in carb for the fiber count. Would probably try this without the tortilla, and just throw it on a salad instead. - 12/27/10
