Ingredients

    1 lb Boneless Pork Chops cut into bite sized pieces
    1 Tbsp Canola Oil
    2 tsp garlic-crushed
    1 bag Frozen Broccolli Cuts
    1 medium Onion-julienned
    2 cups Red peppers-juienned or chopped
    8oz Fresh Portabella Mushrooms
    2 Cups Chicken Broth or Boullion
    4 Tbsp Corn Starch
    8 tsp soy sauce

Directions

1. Heat oil in pan, then add pork and cook just until no longer pink. Remove but keep warm.
2. Add Broccolli, mushrroms and onions to the pan. Cook until desired doneness is reached (I like mine kind of overcooked).
3. While veggies are cooking, mix together corn starch, soy sauce and chicken broth until corn starch is dissolved.
4. When veggies are done, add back in the pork and the chicken broth mixture. Stir until reaches desired thickness and pork is completely cooked through.
5. Serve over hot brown rice (not in calculations).
