Ingredients

    Vegetable Broth - 2 cans
    Tomatoes (any kind) - 1 large can
    Tomato Sauce, no salt - 1 4oz can
    Pinto Beans - 1 can
    Brown Rice - 1/2 cup uncooked
    Frozen Edamame - 1/2 cup to 1 cup
    Frozen Spinach - 1 cup
    Garlic - 3 cloves

Directions

Brown onions and garlic in splash of olive oil. Add the rest of the ingredients and cook until rice is done.
Makes 6-8 servings
