A pureed soup with mushrooms. A pureed soup with mushrooms.
Number of Servings: 4


    1 Tablespoon olive oli
    1 cup onions, carrots and celery
    2 cans chicken broth
    2 cups broccoli
    1 can chic peas
    salt and pepper to taste


Chop onions, carrots, and celery.
Sautee in 1 tablespoon olive oil.
Add rinsed chic peas, broccoli, and chicken broth.
Bring to a boil and simmer for 15 minutes.
Puree in blender.
Add mushrooms and heat.
Serve with 1-2 tablespoon Parmesan cheese or crunchy carackers.
Serves four.
