Introduction
I grilled peaches to go with some fish and had leftovers. I chopped them up and added them to the chicken once it was about cooked through. What a wonderful combination. Ingredients
-
4 4oz chicken breasts, pounded thin( I purchase Milanesa at my local market)
2 peaches, previously grilled
4 Tbsp sugar free apricot preserves
3 Tbsp Vitadila Fig Marinade (or use Hoisin sauce)
Garic pepper/salt free garlic herb seasoning, to taste
Directions
Mix apricot preserve and hoisin sauce together. (I used a Vidadilia Fig Marinade I found at my local market). Add chicken and let sit for about 15 minutes.
Heat nonstick pan on medium. Add chicken and sprinkle with Garlic seasonings to taste. Cook on one side for 10 minutes. Season second side and cook until no longer pink, about another 10 minutes. Add grilled peaches to the pan and let cook for another 10 minutes on low. Serve chicken with peaches and some of the sauce on top.
