Ingredients

1/2 bag goya small white beans
4 slices bacon chopped
1/4 cup onion chopped
1/2 cup carrots chopped
1 zucchini diced
1 garlic clove minced
1/2 cup peas
1/2 cup green beans
1/2 cup corn
1 14.5 oz can diced tomatoes
Beef bouillon cube
Directions
Boil beans in 4 cups of water for 2 minutes then set aside for one hour
Drain and rinse beans
Combine 8 cups of water and beans in crock pot
Meanwhile in skillet cook bacon until crisp; reserve for topping
Drain bacon drippings, reserving 1 TB in pan and cook onion, carrots, zucchini and garlic until tender.
Add mixture to crock pot. Add tomatoes, peas, corn and green beans to craock pot. Stir to combine. Toss in bouillon cube. Cook on high 4-6 hours.
Serve topped with reserved bacon and parmesan cheese
