Ingredients

1 Tbsp Olive Oil
1/2 yellow onions, raw, chopped
4 cup (2 pints) cherry tomatoes
1 Yellow Peppers, chopped
4 Tbsp Tomato Paste
4 Small Zucchini, sliced
1/2 cup Bob's Red Mill TVP
1 cup (Vegetable) Beef Broth
Directions
1. Pour 1/2 cup of boiling water over TVP, set aside.
2. Heat olive oil in skillet over medium-low heat. Add onion and cook until soft. Add zucchini & tomatoes. Cook until tomatoes begin to break down. Squash tomatoes into the sauce as they get wrinkly. You may need to pierce them with a knife if they are not breaking down.
3. Continue to cook covered over moderate heat until mixture resembles a sauce. Add tomato paste and TVP. Add any spices that you want (garlic, pepper, salt, italian seasonings). Cook for another 5-10 minutes. Add pepper. Heat through.
4. Add broth and let the mixture simmer down.
5. Serve over pasta and enjoy.
Makes about 4 servings.
