Ingredients

chicken breast x2, washed, skinned and diced
lime juice : squeeze to serve
onion : 1 medium, chopped
creamed coconut, : 40g, grated
garlic : 4 cloves crushed
groundnut oil : 1 tbsp
salt : to taste
tamarind paste : 1/2 tablespoon
Goan Xacuti Curry Powder : 5 - 6 tsp
Directions
1) To make the Masala, mix together the grated, creamed coconut, the Goan Xacuti Curry Powder and the pureed/ crushed garlic.
2) Heat the oil in a thick bottomed pan and gently fry the onions until browned at the edges. Add the masala paste and cook for a minute or so.
3) Add the chicken pieces and saute. Then add 250ml of water (+/- as needed) and salt to taste and bring to the boil. Add the tamarind pulp to a small amount of boiling hot water to disolve. Remove any stones then stir into the curry, before reducing the heat and simmering for five - ten minutes, or until cooked and the liquid has reduced down and thickened a little.
4) Stir in 2 tbsp of reduced fat creme fraiche, before serving hot with rice or bread.
