Introduction

I needed a larger batch to take to work and I really like chocolatey brownies so I "tweaked" this. I needed a larger batch to take to work and I really like chocolatey brownies so I "tweaked" this.
Number of Servings: 24

Ingredients

    2 cans Mrs Grimes Black beans, well rinsed
    1 C egg substitute
    2 C Equal Sugar Lite
    10 T cocoa
    2 tsp baking powder
    4 T extra virgin olive oil
    2 tsp vanilla extract
    2 oz water
    For topping:
    2 T powdered sugar
    1/4 c. whole wheat flour

Directions

In a blender, combine well rinsed black beans (2 cans), egg substitute and water. Blend until very smooth. Stir together in a bowl, combine Sugar Lite, cocoa, baking powder and flour; add bean mixture and stir well. Add oil, and vanilla. Bake in 13 X 9 pan, 350 F for 35-40 minutes. Sift powder sugar over top of brownies. Let cool completely before cutting into 24 brownies. 1 brownie = 1 serving

    Made 1/2 a batch and I used Agave instead of the equal. Hmmm... I'll have to try it again and do something different. - 2/21/11
