Introduction

Great mini dessert. You can use any topping that you want to but I like the cherry topping the best. Great mini dessert. You can use any topping that you want to but I like the cherry topping the best.
Number of Servings: 24

Ingredients

    2 8 oz packages of lite cream cheese
    2 eggs
    1/2 C sugar
    1 tsp vanilla extract
    24 vanilla wafers
    1 can of cherry pie filling

Directions

Beat all ingredients together until smooth. Place vanilla wafer in cupcake papers with the flat side down. Put a heaping tbsp of cheese mixture onto vanilla wafer and bake for approx. 15 minutes at 350 degrees. Take out of cupcake pan and let cool. Add pie filling on top and serve. Makes 24 mini cheesetarts.
