Ingredients

    4 eggs
    1 cup oil
    1 tsp vanilla
    3 cups zucchini (shredded)
    3 cups flour
    2 cups sugar
    1 tsp salt
    1 tsp baking soda
    2 tsp cinnamon
    2 tsp baking powder

Directions

1. Mix all ingredients together, liquids first, then add dry ingredients.
2. Bake in two, greased and floured, loaf pans for 1 hour at 350 degrees.
3. Makes approximately 40-50 servings

    I used brown sugar because I didn't have regular and substituted half of the oil with unsweetened applesauce and it still came out great. I will definitely make this recipe again. - 8/18/10

    Very simple and straightforward. My family likes cloves in their zucchini bread so I added 1/2 teaspoon for the flavor. Other than that, this is a great recipe. - 4/16/09

    Best Zuchini bread ever, I added a little honey, a dash of extra vanilla, & some raisins, it's a huge hit with the kids also used whole wheat flour - 7/6/11

    I love this easy recipe. I actually did half sugar half brown sugar and substituted all the oil for sugar free apple sauce. I made them in a individual brownie pan for some mini loaves. I cooked them for 18 - 20 minutes and they came amazingly. Next up is to adapt it to chocolate zucchini bread! - 5/5/11
